As George suggested, allowing the fillet to cure a few hours will make the job much easier and you'll still get the bond your looking for. If you found your fillets were lumpy as you were making them it may be your mixture. Ease up on the wood flour (or whatever your main filler is)and try adding some colloidal silica with a touch of microlite to create a much smoother fillet blend that pulls easily with your fillet tool.
