Erik, This is a matter of personal opinion, and for the 3 kayaks I've built I always paint the bottom and topsides to accentuate the shape and lines of the boat. Limiting the bright finish to the deck also provides contrast which focuses the attention there rather than being overwhelmed by a completely varnished boat.
