I find the shape of the boat can be lost somewhat in the wild grain of the plywood so I say paint the hull, varnish the deck. If you've done a first rate job on fairing the hull, it'll look great in a light colour or white. If it's lapstrake (lapstitch) by all means you must paint it a light or white colour. Lapstake/(stitch) or not you'll have a time getting through all the admirers of pretty little boats. Opinions aside, it's still; Your boat, Your choice.
