with the cost of a can of varnish why would you waste the money? You can sand and paint over varnish quite well, but I'd do it the regular way- varnish the decks, tape them off and paint the rest. If you turn the boat upside down you can easily tape off the edges at the sheer and even can spray paint the hull with no problems. I did the last two yaks I built like that.
