I'm sure the others will chime in on what kayaks you should look at. I would say the Chesapeake 17 LT or a Shearwater 17.

Where are you located in Michigan? Lower or the Upper Peninsula? I'm a Yooper in Iron Mountain and am currently in the process of building a Cape Charles 17 (Old retired design). If your looking for marine plywood I purchased some in Traverse City at Rare-earth-Hardwoods.
