To prevent ingress of water through the daggerboard slot, could you also gasket the daggerboard just below the handle so it makes a watertight seal in the trunk? Alternatively, remove it entirely and plug the trunk with a closed-cell foam insert.

In desperate situations, if there's space to do so, allowing your body to float inside the boat while you bail will allow the hull to ride higher (i.e., your body will displace an equivalent amount of water that you will then not have to bail).
