Chris, You've described the process I use with success. Leaving the tape on for multiple coats will leave a hard edge. Removing the tape immediately after each coat of paint will smooth the transition, but require retaping for each new coat.

I'm hoping you taper the strip towards the ends or otherwise stylize it to flow with and enhance the boat's curves.
