Varnishing The Interior

Today I begin varnishing...

For the cockpit: 1. How many coats? 2. How far "underneath" the cockpit do you varnish (as far as the footwells, or just where sun is likely to hit)? 3. Can I just use "satin", or do I need a coat or two of "gloss" (to handle UV) as undercoats before the satin?

Overall, as I am varnishing over epoxy coats, what is the rule of thumb for adding thinner (i.e., under what conditions)?
