Interior Epoxy Prep

I'm currently sanding the interior of my first CS17 in preparation for varnish (the deck is not on yet).

Maybe an age-old question - How much sanding is enough? Do I need to scuff all surfaces in order for the varnish to adhere, or is the sanding more about look and feel? I've already sanded once, re-epoxied, and sanded again. Its better now, but there are still low spots. If I go much further, I'm going to get into the glass in a few spots.
