no v at cockpit

hello everyone, i've just stitched my first ever kayak a 17lt and can't believe how well it came together it's just superb my only problem is there seems not much v around the cockpit it flattens out also bulkheads seem to need a fair amount taken off to go where supposed to be how do we know how much v should be especially if i have to shave some off the bottom of the bulkheads which i assume defines the shape of the bottom of the hull. thankyou in advance Al
