I don't know anything about your motor specifics, but assume the new motor is more powerful, and thus the problem. Would quess the stern is squatting more than the bow rising.

It's been said a good hull for sailing, a good hull for rowing (paddling) and a good hull for power, are all different (although sailing and rowing are closer together, sailboats benefit from beam for stability). If you are adding much forward thrust down low,you need more beam at the stern. Not much help, so only other thing you could do is put your battery and any other weight forward. Maybe you could raise the prop some.

Don't go fast in shallow water; that will really suck the stern down.
