As others have said in previous posts, the textured surface resulting from the second coat having filled the weave, but retaining the weave texture, provides some 'traction' in the cockpit area for moving around. the third coat will only give you a thick enough layer to be able to make the weave texture go away.

Having said that, I'm not clear on whether or not you HAVE fiberglassed the cockpit interior, yet. Either way, having additional layers (of epoxy and/or fiberglass provide additional wear protection at the cost of additional weight - its your choice.

The good news is that you can always add additional epoxy and fiberglass after some use determines the need for it.
