Keep researching until you are sure the plan is the right one. The Chesapeake double is an expanded Chesapeake. It's larger than any production tandem kayak by volume. If you were to sink it down in the water a similar amount as a Ch17 would be with 250lbs you'd probably have 600lbs in the double.

In other words it's a lot of boat to maneuver around if you need to maneuver in wind/waves. The issue with tandems is that if you and the other paddler don't have the horsepower or skill you're more subject to the forces acting on the kayak so that occasionally it's like one person paddling a 21'x30" kayak.
