maple flour is dark but is smooth. My $.02 is that it's academic regarding strength. If there's a failure it'll most likely be at the edge of the fillet/wood interface and not in the fillet itself. I saw a Pram that had been dropped on it's transom and it cracked at the sheer/transom fillet next to top sheer panel and not through the fillet. If you were concerned about strength a little angle piece in that corner or glass tape would be more useful than the makeup of the fillet.
