4x8 feet is about optimal, any bigger and you'll be walking around it all the time. Its good to split it lengthwise into two 2x8 foot tables. Then you can put them end-to-end for joining the panels and gluing on the sheer clamps. When you get to the sawhorse stage, the tables can go against the wall as a bench. Try to avoid working on the floor. It's hard to do quality work on your knees!
