huckly buckly bottom line

I've built both a Ches 16 and Pax 20. The plans for both call for some removal of ply along the bottom line of the V where the two bottom pannels meet. The finished result is a slightly uneven line showing highs and lows from stem to stern. Has anyone tried leaving the edges straight and joining them up? Would this not yield a straighter keeline at the end?
