Fiberglassing the SW hull

It's almost time to glass the hull of my third boat; a Shearwater 17 Hybrid. Unlike my first two builds (both Chessies), I see that three layers of cloth are used. Are there any tricks to this? Do you place all three layers on the boat and wet through them all at once? It seems like it might be easier to control if one were to position, and then wet, one layer at a time. Maybe it doesn't make any difference, but if one way is easier than the other I'd like to know ahead of time.

As a third option, would it be OK to put one layer on per day; sanding off runs & feathering in between?
