Matt, I'd say use varnish (does that other stuff have UV protection?). You might need to thin it slightly to get it to the right viscosity. If you are going to be doing the spraying, practice before you try it on the kayak. There is some skill to spraying. if it goes on too thin, the finish looks like orange peel, and too thick results in runs. Go light. Orange peel is easier to fix than runs (rub it flat with 400 grade wet, and put on another coat). All the usual rules apply (clean smooth surface with no fingerprints, keep a wet edge, dont re-do any areas, etc).
