The syringes, being small and thin, usually don't kick as fast as the pot you fill them from. Try not to warm them with your hands. I've used a syringe for a 10-minute fill-all-the-tiny-holes session, without a problem. I have not (yet) tried the pastry bag, but I would think you would need to empty it pretty quickly before starting on the filleting.
