Well, you can skip the painting and varnishing if you dont mind re-doing the epoxy after the sun's finished with it. That happened to Kurt's first pair of Kayaks, when he took them on a road trip without any UV protection. See the link. There are some photos of the UV-chewed epoxy towards the bottom of the page. Kurt does these things so we don't have to!
