Kayak Size Question

I'm interested in one day building my own sea kayak. I've decided that my first kayak will likely be either a stitch and glue or a cedar strip. I've seen lots of plans for boats, big and small, but I have no idea what numbers I should be looking for for a person my size. I am 6'5" tall, wear size 13 shoes and weigh about 230lbs. I tried out a friends kayak and I had a difficult time sliding into the cockpit, and once in, my feet were way past the rudder controls and I felt I couldn't bend my knees enough to be comfortable. After an extended period in the boat, my legs fell asleep. Any advice for selecting a kayak based on my size would be greatly appreciated.
