My 2 cents: Tools: I've read that bamboo blunts tools quite quickly, so that's something to watch out for. Weight: How dense is bamboo strip? There might be a weight penalty compared to, say, cedar. Strength: Assuming the epoxy bonding is OK, I would expect this to be an extremely resilient hull, good for bouncing off rocks and torture of that kind. Bamboo strip can deflect a long way before it snaps. It might be a good idea to stagger the bamboo inter-segment 'joints' when arranging the strips, to avoid creating weak(er) spots.
