Eric, I thnk you are describing a skeg. The can be fixed, or, more usually, retractable, The rectractable kind is more usual. CLC sells kits which can be retro-fitted to exixsting CLC kayaks. The link to to a page which describes how a retractable skeg is fitted. If you want something even simpler, you can have a fixed skeg, which is usually a strip of solid wood, maybe 2" deep and 1' to 2' long epoxied to the outside of the hull near the stern. You would need to experiment a bit with temporary ones to find the right dimensions.
