2 tlbs. unsalted butter 1 cup finely chopped vidala onions 1/2 cup celery 1/2 cup finely chopped red bell pepper salt cayenne 1 tlbs. garlic 1 lb. crab meat {Fresh is best if you can get em, but canned will do} 1/4 cup Parmesan cheese 2 tlbs. chopped fresh Parsley, flat leaf 3 tlbs. spicy mustard juice of 1 lemon or 3 tbls. 1/2 cup mayonnaise Worcesterhire sauce Hot Pepper sauce 3/4 to 1 cup fine bread crumbs 1/4 cup flour 2 eggs{for egg wash} 1 tlbs. water Cracker Meal Melt butter in sauce pan over medium heat. Add onions,celery, bell peppers, season with salt and cayene, pinch of each.Cook , stirring for 5 mins.Add garlic and cook, stirring for 2 mins.Cool for 10 mins. In a large mixing bowl, combine crabmeat,parsley, Parmesan, mustard, { I use Guldens Spicy Brown mustard}and lemon juice.Mix Mayo in a small bowl with the Worcestershire and hot pepper sauce, {splash of each}. Combine veggie mixture with crabmeat. Fold in Mayo mixture and fine bread crumbs. Portion out the mixture , I use a 1/3 measureing cup, on to a tray and put in fridge for a couple hours, makes it easier to form into pattys, you should get 10-12 portions.Put flour into to shallow bowl, in another small bowl mix eggs and water, {egg wash}, and in a dish put the Cracker Meal, { you can use regular bread crumbs but Craker Meal is very fine with no added taste, makes a very nice, thin coating for when you cook the Crab Cakes}.Dredge the Crab Cakes pattys you made in the flour then dip in the egg wash then coat with the Cracker Meal. Fry those puppys in vegtable oil on medium high heat for 3-4 mins. on each side till golden brown and Enjoy !
