I agree - ricepaper plus inkjet printer worked a treat. I only used black ink though. Not sure how stable colors would be in the long term. Also, I printed the image "mirror-image" (set the printer properties for "t-shirt transfer" etc), then placed it ink-side-down on the wet epoxy. That way, when you sand, you are less likely to accidentally sand into the ink, and will remove a "warning layer" epoxy-soaked paper first.
