You can actually cast an epoxy base beneath the VCP flange to soak up the camber of the deck and create a flat base. Done carefully (hint: lots of masking tape), it can look really neat. I stole this nice image of such a casting off of WEST System's site. That's a sailboat winch assembly but a hatch would work the same way.
