varnish or not to varnish

I'm in the finishing stages of a SH17, and I'm wondering what I should be thiniing about varnishing on the interior of the boat. I know I should varnish the majority of the interior of the cockpit, but what about the bow/stern compartments and hatch covers? also, if anyone knows a brand of champagne that works particularly well for christening kayaks, just let me know ;) Thanks guys!!
