Building time should not be your primary consideration. These are different boats. Every boat style has different handling characteristics, strengths and weaknesses for different uses. Think about what you wish to do with your kayak, the kinds of environments you will paddle in (lakes, bays, open ocean, surf), the kinds of trips you will take (day trips, expeditions), and look at this site's "choosing a kayak", then decide which boat best fits your needs and desires.
