Maybe google "New Hampshire Boatbuilders." It sounds like your project may entail a bit more engineering knowledge than the typical kayak builder would have. Lots more stress on the wooden hull of a hydroplane.

Coastal Maine has dozens of professional builders. Maybe check with the folks at the Wooden Boat School out in Brooklyn, ME for a recommendation.
