fill them, unless you are prepared to sand a very significant radius on the chines. a simple mixture of woodflour...mayonaise to toothpaste consistency will do.

if you are going for a bright finish, i would echo mike's advice and mask the area so that your fill only goes in the crevass and not over the rest of the wood. if it gets on the surface, it can be very challenging to sand off without impacting the colour/texture of the veneer.

these boats look great with a bright finish but it requires that little extra bit of attention to detail in all steps to ensure that you protect the veneer as you work.
