I have never had any epoxy freeze solid, but I have had an gallon of WEST system crystalize over winter. It is a well known issue with some epoxies, and is solved by heating the epoxy. When summer came, I put the can in the sun near a dark wall, and let it stand there for a day. Crystals was gone, and the epoxy was fine to use (at least the mechanical properties, which I tested roughly).
