I'm a huge fan of the "assemble the entire boat and take it outside for sanding" method. Cuts down tremendously on epoxy dust in the shop. Plus you're going to get some epoxy runs down the sides of the hull when you glass the deck no matter how careful you are. That's why they make scrapers and ROS's! And don't forget, always wear the mask when sanding.
