FINAL EPOXY COATS

Looking for suggestions for final epoxy coat application on interior of Chester Yawl. I plan to keep it natural wood. Each time I lay a coat of epoxy on inside I end up creating more sags which I then end up scraping and sanding. Appreciate suggestions for application of final thin coat(s) of epoxy so I won't have to sand or scrape down final coat and I can get on to varnishing. Thanks
