Ches 16 alterations

I really want to build a kayak and have finalized a model, I think. The Chesapeake 16. What I want to do is make the knee heighth 1 inch lower, as is the 16lt. Will this do any harm and will all I have to do is shave an inche off each side panel pefore installing shear strip? I realize that I could order the 16lt, but the 16 is longer, so I think I'll end up with what I want. Any suggestions?
