Don't do a Mill Creek if open water is your game -- go for a boat without a flat bottom, and has the narrower beam. This is coming from a guy who started out with a pair of MC13's, and loves 'em.
But you're talking about two totally different kinds of boats here, man. The MC16 is more of a flat water canoe, and can accomodate multiple paddlers. The Ch18 is a solo sea kayak. The MC is a lovely performer on still waters, but can be a chore in wind and waves; slapping the chop unmercifully, and rolling around 'til your middle aches.
Here's whatcha do: build a Ch18, then build boats for everyone else afterwards as you see fit. Got that? Good.
