Stripping airfoil-like fairings onto the akas sounds like a lot of work, although it'll be very pretty. I'd make the fairings as light as possible, say with 1/4" cedar strips. The offshore multihulls used to use solid foam glued to the akas and shaped into a foil shape, then fiberglassed. That's how I'd do it if I wanted to turn the akas into foil-shapes.
