If you are doing and onlay with a complex pattern or several pieces, cut and assemble it upside-down on a flat surface using tiny pieces of masking tape to hold it together. You can then handle it gently as a single piece and this makes gluing much easier and neater. The bits of tape will be forever entombed in your deck, but I don't think this would ever pose a problem.
