UV breaks down epoxy into a white cloudy plastic that has less physical strength and waterproofness than before it broke down from UV. Put a sheet of polyethelene outside and notice how it gets crumbly after a few months? If a well used varnished kayak is left outside turned upside down there are parts of the keel where the varnish is stripped off. After a summers time you'll notice the unvarnished section is whitish. You could get away with not varnishing the cockpit,,but if you transported the kayak upright and in direct sun over a few years the epoxy will get whitish.
