Dennis, I'm down in League City, built seven boats to date, and use Raka 127/350 epoxy exclusively. The stuff is hard in four hours, and I can sand it five or six hours leter when the summer temperatures are upon us.
I heartily endorse the advice that you read all your manufacturer's tech lit... it's kinda dry reading, but there's good stuff for you to know in there.
And speaking of dry, I've found that our climate can wreak havoc with epoxy if you ain't mighty careful. If at possible, apply your epoxy indoors (you're in Houston, so I **know** you have A/C). This is a bad time of year to play with epoxy 'round these parts.
