i think your approach would work fine. and i see no problem keeping your deck clear.

you hit on the trick....if the boot stripe is not straight...it will look a bit wacky. it is also important that the boot line be parrallel to the loaded waterline for it to look nie.

i am not sure that you are compromizing too much in the safety arena if you went with an all white hull. I would first start by making the hull white and come on with the boot strip/red bottom as a second step. you will then at least be able to properly determine the load water line and mark it appropriately before applying colours.
