varnish times

My wr18 is almost done. I plan on taking it to the great lakes seakayaking simposium.
My only problem. I leave in 7 days and I have only put 1 coat of varnish on my hull. I have all coats on the deck to do, and all remaining coats on the hull.
My guess is I should not drive my boat 400 miles with green epoxy. I figure the saddles could cause problems at 60 or 80 miles an hour if it is not fully hardended.
How may days should I let it cure before I drive ?
I guess 3 coats will be fine, and I can sand and reapply when I get back. Do you agree ?
