Mischa,
as kurt suggested, if the hatches are done right....they leakage during a capsize should be minimal...i'm talking tablespoons max.
the top things that come to mind are your gaskets and how tightly your hatches are being held on.
also, if this happened during self rescue....were you putting a lot of pressure on the hatch covers...did they deform? are the edges of the hatch opening properly reinforced?
send a couple pics of your hatches...i am sure we can sort it out.
