Frank about said it all. I use 3/4"x1/2" stock for the shear clamps, and avoid extra layers of glass at the ends in favor of brass rub strips.
Not sure if I'd recommend 3mm for the hull panels in a boat so long and narrow as the sport tandem.
My wife and I paddled the prototype in MD a few years ago. A very fast and lovely boat.
