you could put on 8 coats of varnish and the wood will still change color. The varnish is protecting the epoxy from breaking down. When that happens it's white and frosty and the epoxy is weaker and there's nothing to do except start all over again. Changes in wood color do not reflect weakened damaged epoxy. I epoxied a couple webbing tabs on the cockpit floor of a fiberglass kayak eight years ago. The epoxy was never painted. It has since yellowed and one tab pulled right off. I think if it was painted or varnished that wouldn't have happened. Check out the One Ocean Kayak website for the epoxy/varnish test over time. It spells out the obvious with photographs.
