Thanks everyone for getting back to me so quickly. Here's what I've decided to do:

First, I'm going to scrape / sand the first coat of epoxy, for a couple of reasons -- I really think I laid it on too thick, so I'm hoping to ditch some of the excess weight. Also, since I haven't worked with fiberglass before, it'll be good practice for when I do the important parts. And finally, even though it will be invisible inside the hull, it would drive me CRAZY knowing there are runs in there...

Second, I'm going to keep the interior bright finished, but coat it with varnish for the UV protection, just in case... I would like to have a nice white interior, but I think it would involve too much work sanding / filling for me to get a finish that I'd be happy with. The bright finished interior will hide the stuff I don't like to see...
