I am no expert.

I have filled 1/4" gaps with flour thickened expoxy. Once it is wrapped in fiberglass it turned out fine. I think you can plane off the extra length of the panels. And I think you can plane off some the edges in the pannels that would reduce the gap. This could lead to gaps in other places, or move your problem. It may be good to help spread the error to different areas. If keel line is straight I bet you are ok.

I do not think a deeper V in your hull is a problem unless it starts or ends abruptly. This could probably be reduced by planning this edge. Personally I like V hull boats and would leave it if it was graceful.
