You might wait to start trimming until you have the boat fully stitched and the hull spread apart to its final width. That could change what you are seeing now as you stitch. The keel angle could well change as you fit bulkheads and do the final tweek to be sure its all tight and not twisted.

And a 1/16th is nothing to worry about in S&G construction.
