"Tab & Tack"

Looking for some input on the 'Tab & Tack' method after the hulls are wired. We are building some boats in an 'Evening Class' and time is a bit limited each session ( 2 1/2 Hrs). I am wondering if we tack thte hulls together one evening, then fillet, tape them another? Any thoughts.
