Ray, my two cents: go ahead without the glass, it's not like you haven't been warned. I'd soak the deck with epoxy prior to varnish though. I look at it this way, if you enjoy working on your kayak, use it and learn from your choices. Worse comes to worse, you take it back down to the epoxy next year and glass it with 4 or 6oz cloth. With that heavy deck on there I'd be most concerned with the eventual weight than anything else. (I'm heading towards 3mm decks personally.)
