My first two kayaks (CH16's) were just filleted and then the wires were cut sanded and left in place as per CLC's instructions. My current project (a Sea Spirit 17 hybrid) is tabbed and I think tabbing is a lot tidier, you can make the fillets smaller which means less weight.

Glassing as much of the inside of the kayak as you can really tidys up the inside up, but it does add weight. Fibreglass tape never looks as good as a nice tidy fibreglass matt.
